A Sunday Brunch Show Stopper

Sunday Brunch at the historic Casa Marina Hotel and Restaurant in Jacksonville Beach, Florida would not be complete without Chef Aaron Webb‘s dramatically presented Red Snapper.  The gorgeous flame colored fish is served whole, in a standing position, along with dipping sauce.

I had the privilege of watching Chef prepare the fish and could not believe how easy it looked. 

I am almost convinced I could try it myself, but still find it intimidating. 

Here is a look at how Chef Webb does it: 

Start with a 5 to 7 pound whole Red Snapper, scaled and de-gilled.  Leave on the tail and head. 

Gently score the fish the long way and cross ways with a sharp knife forming large diamonds.  

Do not cut through the center bone.

With virgin olive oil, pour or brush in between the scored crevices.  Season with your choices of spices:garlic powder, cumin, lemon pepper, salt and pepper.

Create a large ball from silver foil and stuff into the open base cavity of the fish so it will stand up firmly on an oiled baking sheet. 

Cook at 325 degrees for 45 minutes; rotate and then check in another 20 minutes for doneness.  

Serve with your choice of sipping sauce.

St. Augustine: My New Home in America’s Oldest City

A  New Year called for a new start and I chose to move to nearby St. Augustine, the oldest city in the United States.  My condo would be close enough for me to walk into the historic district, yet in a lovely, almost new building.  My furniture wouldn’t arrive until January 2nd, however, I would sleep on an inflatable mattress and celebrate New Year’s Eve in my new home.

Exhausted after spending three days in Orlando and doing Disney with grandson Jonah and his parents, I was thrilled to hear the fireworks were scheduled for  8:30 pm.  How family friendly can you get?

So, I set up my tripod and camera on the patio and enjoyed taking some long exposure shots.  Pretty dramatic!!

Afterward, I  went to bed, never opened the bottle of champagne.  When I awakened on January 1st, I was a resident of  St. Augustine.  I excitedly went out to explore the nearly 450-year-old city on foot.

Delicious Fun with Gingy at Gaylord Palms

Gaylord Palms Resort is an oasis in the midst of busy Orlando. Stroll along with serpentine paths lined with giant ferns, Cabbage Palms, and verdant greenery and you’re walking in a botanical garden, the Louisiana bayou or an island paradise. Orchids, waterfalls, streams– even a lake with a boat fit inside the hotel atrium. The behemoth structure seems like a biosphere. Why, one could live within the confines for days and never need to go outside.
