Turning the Mostly Apples Cake into the Mostly Apple Hurricane Cake

I was in a hurry as we in Florida were expecting a hurricane, and that likely means a power outages.  I wanted a quick and easy bake, something without a lot of bowls and pans to clean-up. But, I needed a recipe with ingredients that were already in the house. That meant I couldn’t make my Easy Blackberry Cobbler.

 I had recently seen the recipe for a Mostly Apples Apple Cake from King Arthur Baking site and it caught my eye. The cake looked like a cross between an apple pie and apple cake, more like a cobbler but not as fruity.

Easy Blackberry Cobbler

I’m a huge fan of cobblers, crisps, and pies.; my favorite remains fresh peach pie.  But blackberries were on sale and so I had two grocery store containers of them.

I started looking for cobbler recipes and had to eliminate a few.  One called for cooking the berries in an cast iron skillet on the stove top, then transferring to the oven.  Another called for ingredients I didn’t have. 

Then I discovered the easy to make recipe (below) for blackberry cobbler.  Perfect!

Upside- Down Gingerbread for the Holidays

I’m a fan of gingerbread, be it cookies, muffins, gingerbread men, or gingerbread houses.  But, my favorite is gingerbread cake because it is so moist and gooey.  I like to believe the molasses adds some healthful iron benefits, but that’s likely wishful thinking.
